Banana-nana Nut Bread

I mainly use the recipe from the Better Homes and Gardens Cookbook. There are a couple things that I change and add/remove to make my own.






Ingredients:
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/3 teaspoon ground
cinnamon
1/4 teaspoon ground
nutmeg
2 tablespoons of applesauce
2 eggs, beaten
2 cups mashed very ripe bananas
1 cup sugar
1/2 cup melted butter

1/2 cup chopped walnuts

Directions:

Preheat oven to 350 degrees. Spray the bottom of a loaf pan with Bake Ease; set aside. In a mixing bowl, combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.


In a medium bowl combine beaten eggs, mashed bananas, sugar, butter and applesauce. Add egg mixture all at once to flour mixture. Stir just until moistened (batter should be lumpy). Fold in nuts. Dump into loaf pan, spread mixture evenly.

Bake for 40-45 minutes for 9x5x3-inch pan or 25-30 minutes for 7-1/2x3-1/2x2-inch pans. After initial baking time, cover loosely with foil and bake for 15 more minutes to prevent overbrowning. Test with toothpick. It should come out almost clean. Cool in pan on a wire rack for 10 minutes. Remove from pan. Cool completely on a wire rack. Wrap in plastic and store overnight before slicing.
