Just Jambalaya


Prep time: 1 hour (all together)
Total time: about 4 hours
Serves: 8

2 large chicken breasts
1 pkg of Chorizo skinless smoked sausage (14-16 oz)
1 lb peeled and deveined shrimp
2 cups chicken broth
5 celery stalks - diced
5 nice sized garlic cloves - minced
1 green bell pepper - cored, deseeded and diced
1 medium onion - diced
1 (28 oz) can peeled diced tomatoes with juice
1 cup of white rice
2 TB chili powder
2 tsp dried oregano
2 tsp parsley flakes
2 tsp cumin
1 tsp cayenne pepper
7-10 shakes of Tabasco sauce

In a slow cooker, add broth, celery, garlic, green pepper, onion, tomatoes, and all seasoning on high heat for 1/2 hour.
Add chicken, let fully cook for 2 hours. Remove chicken, cut into bite-size peices and return into slow cooker.
Slice the smoked sausage diagonally into 1/4 inch pieces and mix in well. Add rice and lower the heat on the slow cooker to low. Let simmer for an hour. The jambalaya will thicken significantly.
Add shrimp. Slow cook for another 20-30 minutes.
Serve and enjoy.
