These are easy to make and are a hit wherever you take them.
Preperation time: 30 minutes
Fridge overnight
1 pkg of buritto tortillas
2 bars of softened cream cheese
1 pkg of drained, finely chopped cooked ham
1/3 finely chopped green pepper
1/3 finely chopped red pepper
1/3 finely chopped yellow pepper
1 tsp finely chopped black olives
Combine ham, peppers and black olives into a chopper and chop until well blended. Mixture will be saucy. Mix ham/pepper sauce and cream cheese into medium bowl until well blended.
Lay tortilla flat on counter and spread mixture 1/8 inch in middle most part of tortilla from top to bottom. Don't worry about the sides, those will be cut off as they will be hollow. Roll (tightly) the tortilla from bottom to top and secure with toothpicks.
Cut the hollow ends off and toss (there shouldn't be any mixture in here)
Make as many logs as you can. I usually get 6-8 logs out of it.
Refridgerate over night.
The pinwheels should be harder after cooling over night. Get a really good sharp knife (un-serrated) and slice log into 1/2 inch wheels.
